Julia Child "Throw Down" at The Culinary Center of Kansas City


Fri. Nov. 13, we will have The Julia Child “Throw-Down”. The Ultimate Culinary Competition. The lights dim … the crowd becomes hushed … and the door opens to two very accomplished chefs complete in their chef regalia … to compete for the coveted “Golden Julia Award” in CCKC’s Ultimate Culinary Competition – the Julia Child “Throw-Down.” CCKC’s Executive Chef Matt (“Chef Too Tall”) Chatfield and Chef Greg Oliver (Chef Matt's former "boss") in a head-to-head battle of their French culinary acumen, all in good fun of course and all to pay tribute to an American culinary legend … Julia Child. Only one will win tonight. The rules are simple: using Julia’s recipes they will face off by taking turns outdoing the other, course by course by course. Interesting Culinary Reading


What is a gastronomic society or 'txoko'?
The oldest societies are strictly for men only, although the more recent ones accept both men and women members.

Gastronomic societies, known as "txokos" in Bizkaia, are a local phenomenon. These are private clubs with a relaxed atmosphere where the members share a dining room and kitchen in which they prepare traditional lunches and dinners.
The oldest societies are strictly for men only, although the more recent ones accept both men and women members. There is one rule still in force according to which women can not cook or do the cleaning after the lunch or dinner. Any man or woman can enter the society but only if he comes with a member of the member.
Some gastronomic societies have stricter rules than others. Most of them choose among the members a president, a treasurer and some more important positions. Members hold periodical meetings in which they fix the rules, so even if the rules in each society are very similar, it is possible to find some rules different or odd.
Apart from the traditional gastronomy societies, there are also some other “txokos” which are not owned by a group of people but by an only person. They are usually placed on the ground floor of a house or isolated in some estates in the country. An individual person and his relatives own this place a meeting place for friends and relatives.

Recipe of the Week

Southwest Turkey Corn Chowder
2 lbs. potatoes, diced
1 quart chicken stock
3/4 cup minced bacon
3/4 cup diced onion
3/4 cup diced celery
1/2 cup diced green pepper
1/2 cup diced red pepper
1 Tablespoon chili powder
1 Tablespoon ground cumin
1 teaspoon black pepper
1 teaspoon paprika
1 1/2 cups all purpose flour
2 cups corn, pureed (frozen or canned)
4 cups whole kernel corn (frozen or canned)
1 bay leaf
1 pint heavy cream
1 pint milk
1 pound good quality smoked turkey, diced
salt & pepper to taste
Hot Pepper sauce to taste
Worcestershire sauce to taste

In a large pot cook potatoes in chicken stock until tender. Drain; reserve stock. In a separate soup pot, render the bacon. Saute the onions, celery and peppers in the rendered bacon along with the chili powder, cumin, black pepper and paprika. Stir in flour and cook to make to make a blond roux. Add pureed corn to roux. Add reserved chicken stock in stages, stirring between additions. Add whole corn and bay leaf and simmer until corn is tender. Remove the bay leaf. Combine heavy cream and milk. Measure approximately 2 cups of hot soup mixture and pour into the cream/milk mixture. Add the tempered cream and milk gradually to soup stirring constantly. Add the potatoes and turkey and simmer for 10 minutes. Add salt, pepper sauce and worcestersire sauce to taste. Makes 10-12 servings.
